One of my (many) New Year’s resolutions this year was to cook more vegetarian meals – something which I have to admit I’ve been rather crap at implementing so far. I think one of the main reasons for this is that I don’t know a huge number of vegetarian dishes so when dinner time comes around and I need to make something in a hurry, I tend to go straight for good ol’ meaty recipes that I know off by heart.
However, since we’ve pretty much reached the middle of the year (eeek!), I thought it was about time I start making a real effort and learn some new vegetarian recipes! I spent hours scouring Pinterest over the weekend and since it’s ‘Meatless Monday’ today, I thought it’d be a good time to share some of my top picks with you. When looking through recipes, I basically asked myself two things: a) would the dish be ‘filling’ enough for my meat-loving hubby? b) Would it be reasonably easy enough to make? If the answer was yes on both counts then the recipe made the cut.
