As promised, here is the recipe for the Champagne Mojitos the girls and I enjoyed during our first episode of Cocktails and Chats last week.
I served them in champagne flutes but I think they’d also look really cute in mason jars or short tumblers for a more casual look.
Either way, they’re delicious!
Champagne Mojitos (makes approx 6 drinks)
3-4 mint sprigs
3 tbs sugar (or 2tbs of honey)
2 large limes, 1 cut into wedges, the other cut into slices for garnish
3/4 cup white rum
1/3 cup ice
1 bottle cold champagne or sparkling wine (I used Prosecco)
♥ In a cocktail shaker, combine the mint leaves, sugar and lime wedges. Muddle well.
♥ Add the rum and ice and shake well.
♥ Strain the rum mixture evenly between 6 champagne glasses.
♥ Top with sparkling wine and garnish with lime.
