As a self-proclaimed lazy girl, it’s not often than I make homemade gifts. Don’t get me wrong, I love the idea of presenting someone with something ‘cute and personal’ but the thought of having to bake for hours is generally enough for me to run to the store and buy a scented candle instead. These coconut snowballs are the only exception to this rule. Firstly because I love coconut and secondly because they are so damn easy to make.
I adapted this recipe by replacing the maple syrup with honey and not putting in any cinnamon. Then I wrapped each ‘snowball’ in cellophane and put them in a festive box. Incidentally, this is a gluten-free, nut-free and dairy free recipe so you really can give these coconut snowballs to anyone. Oh yeah, and they look cute too – Merry Christmas!
