Impromptu visits from friends often make for the best evenings and so I always keep a few ingredients on hand for last minute appetizers. One of my go-to recipes is ‘halloumi cheese, tomato and basil crostini’. In the summer I like to do them on the BBQ as it adds a lovely charred taste the melted cheese but they are just as delicious quickly pan-fried on a stove top. Fresh basil can be substituted with pesto but I will not compromise on a drizzle of very good extra virgin olive oil just before serving.

Grilled halloumi crostini with tomato and basil
Ingredients (makes 10 crostinis)
10 slices of Halloumi cheese (about 1-1.5cm thick)
10 slices of baguette (or store-bought crostinis)
2 tomatoes cored and cut into approx. 1cm slices
Extra Virgin olive oil
Chilli flakes (optional)
Pre-heat oven grill to 180c
Place the bread slices onto a baking tray and brush with olive oil. Bake for about 2-3 mins or until lightly toasted. Set aside.
Heat 2 tbs of olive oil in a pan and fry halloumi cheese until golden brown on both sides.
Top each crostini with a slice of tomato, halloumi and basil leaf. Drizzle with olive oil and sprinkle with chilli flakes if desired.
Enjoy with sparkling wine or a dry Rosé.
