I used to feel really intimidated by any cocktail recipe that called for ‘simple syrup’. I don’t really know why but it somehow always sounded a little bit too time consuming and complicated for my basic cocktail making skills. However, when I came across this recipe for a ‘Rosemary Gin Fizz’ cocktail I just couldn’t resist making it. I love rosemary!
Turns out flavored simple syrup is ridiculously easy to make. It’s literally sugar dissolved in hot water and the options for infusions are endless. In less than ten minutes I had a whole jar of rosemary syrup ready – with plenty left to sweeten up future cocktails (simple syrup will keep for up to 6 months in the fridge in a well sealed bottle or jar).
The rosemary brought a beautiful scent and earthy flavor to the Gin Fizz without overpowering it. I think it would make a lovely autumnal alternative to Gin and Tonic…
