I don’t know about you but after a long weekend filled with giant chocolate eggs and other Easter treats, I’m definitely ready for some lighter food this week!

This is why I put this little dinner menu together which features nothing but healthy recipes. And when I say ‘healthy’ I don’t mean bland or boring – I mean dishes that not only taste delicious but also happen to be good for you. Because after all, life’s too short to eat bad meals, healthy or not. ;)

I’ve always loved potato chips but much to my despair they definitely don’t count as a healthy treat. This sweet potato version sounds amazing though and could make for a worthy alternative. The side of lemony dip also sounds really good!

Panko Crusted Salmon

Salmon is full of healthy fats and nutrients so you definitely shouldn’t feel guilty whilst enjoying this yummy dish. I suppose you could make even healthier by omitting the crust all together but I think it sounds perfect as is!

Just because we’re going for a healthy(ish) meal here doesn’t mean we shouldn’t have dessert, right? This beautiful crumble recipe can also be made sugar-free and gluten-free!
