Whenever I’m stuck for ideas for party appetizers (or short on time) I always make mini quiches. I know they’ll be a hit (they’re generally the first thing to go) and because they’re so easy to make they give me more time to prepare other things as well. Quiches are also really versatile so you can pretty much make them with whatever you’ve got on hand be it vegetables, blue cheese, tuna, leeks, salmon, sun-dried tomatoes, the list goes on!
My personal favorite is a simple bacon and onion quiche so it’s often the version that I end up making for my parties. After all, the guests shouldn’t have all the fun, should they? And who are they to know that they were in fact 24 mini quiches and not
22, 20 before they arrived?
Ingredients (makes approx 24 mini quiches)
1/2 small onion, finely chopped
3 slices (or 100g) rindless bacon, diced
1 cup of cream (or half and half)
2 large eggs
1/2 cup grated cheese (preferably gruyere but tasty is fine too)
2 pre-made frozen pastry squares, thawed but still cold
Salt + Pepper
♥ Preheat oven to 190 degrees Celsius.
♥ Heat 1 tbs of olive oil in a medium frying pan over medium high heat and saute the bacon and onion until soft and lightly golden (about 5 mins). Leave to cool.
♥ In a bowl, whisk together the eggs, cream and cheese. Season with salt and pepper.
♥ Place the sheets of pastry on a lightly floured surface. Using a cookie cutter, cut 24 rounds out of pastry sheets. Lightly grease a 24 cup mini muffin tin and press a round of pastry into each muffin cup.
♥ Divide the bacon/onion mix evenly between the pastry cups then top each one with the egg mixture until 3/4 full.
♥ Bake for about 15 minutes or until quiches are golden and set in the middle.
