Autumn officially begun in Australia on the 1st, which would have really bummed me out if it wasn’t for the fact that it happened to coincide with the best weather week we’ve had all year. It feels like we’re headed for an Indian summer here in Melbourne and I’m definitely not complaining as there’s still way too many things I need to tick off my ‘things to do while the weather is nice’ list!
One of those things is to finally get around to using the community tennis courts down our street. Mark and I used to often play tennis together when we lived in New Zealand but then we kind of stopped when we moved here. We needed to have our rackets restrung but never got around to doing it so they’ve been sitting at the back of our cupboard for the past three years. Then we got a wii console last month and started playing tennis on that! While it’s been fun and much more sweaty than I thought (sorry this is probably TMI) it’s also made me want to play on a real court again.
I’m hoping we can get our tennis rackets sorted soon but, in the meantime, I’ll just have to keep on practising with the wii. I’ve also been practicing my Pimms cocktail-making of course, because virtual tennis or not – one needs a refreshment after a hard day on the court right? ;)
I’m sure you’re already familiar with the classic Pimms cup recipe (it’s written on the bottle after all) but if you’re looking for an alternative, I’ve shared my favorite Pimms cocktail recipe below. Basically, I like to replace lemonade with ginger beer and to up the fruit content. I also add a little bit of gin, because you know, it’s delicious.
Ingredients (makes 1 pitcher)
1 cup Pimms
1/3 cup Gin
3 cups Ginger beer (or ginger ale)
1 orange, sliced
1 lemon, sliced
1/2 cucumber, sliced
a few sprigs of fresh mint (one per person)
100 g strawberries, quartered
100 g blueberries (optional)
1 cup ice
1. Add ice to a jug/pitcher. Top with fruit.
2. Pour in pimms and gin and top with lemonade.
3. Garnish with mint and stir.
4. Serve immediately.
