Muffins are a cafe staple and so it never occurred to me to bake some before to be honest, I mean why slave in the kitchen when you can buy a muffin just around the corner from your house?
But when I found my favourite cafe closed down for renovations a few days ago I just had to try this recipe out.
It was revelatory: these fresh muffins were so deliciously moist, with the perfect balance of cheese, spinach and sundried tomatoes. I’m not sure if I can ever go back to store bought muffins now…Moral of the story, don’t ever close down your cafe for renovations! ☺
