Last week Mark and I drove out to Sunny Ridge, a strawberry farm located about an hour outside of Melbourne. It was the first time I had picked fresh fruit since I was 5 years old (my parents, bless their city-loving hearts, have never been really big on the countryside) so I was pretty excited. It’s peak strawberry season here in Australia so despite the fact that there were many people around the fields were still bursting with fruit. The smell alone was incredible! We spent an hour going through the aisles and walked away with three punnets full of sweet strawberries.
On the way home I started thinking about what to do with them and of course the first thing that popped into my head was a cocktail! This Strawberry Basil Sparkler is the perfect Summer drink – refreshing but with a nice sweet kick to it. Of course you could make it a virgin cocktail or go the opposite way and replace the soda water with sparkling wine – both options are delicious!
Strawberry and Basil Sparkler
Ingredients (makes one)
4 large Strawberries, quartered
1 tsp Honey (or simple syrup)
3 Basil leaves + 1 for decoration
In a cocktail shaker muddle half of the strawberries with the vodka, basil leaves and honey. Strain the mixture into a cocktail glass and top with the remaining strawberries, basil leaf, ice and soda water.
