Do you eat many vegetarian meals at your house? I have to admit I used to be a real meat lover and rarely made anything that didn’t have at least a tiny bit of meat in it up until a few years ago. It wasn’t until I made a few vegetarian friends and invited them over for dinner parties that I started to really get into vegetarian cooking. Now my Honey and I eat at least two vegetarian meals a week and we actually both love it. We even started doing Meatless Mondays!
Most of the time, I’ll make something quick and easy on Monday nights like a stir-fry but every once in a while I like to go all out and cook a full Vegetarian feast. I find it’s the best way to brighten a dull Monday and it’s also a good way to try new recipes.
Here’s the vegetarian menu I’m planning on making next:
Entree: Herb And Panko Crusted Baked Tomatoes
I love the simplicity of this recipe and I think the panko filling would also work well with mushrooms, sliced eggplant or zucchini.

Dessert: Sweet Potato Creme Brulée
As a sweet potato lover, I’m very intrigued by this recipe. I’ve never used sweet potato in a dessert before but I have a feeling it would be delicious. Plus I figured I might as well go over the top and incorporate vegetables in my dessert too!
